Rice Upma


 Upma is the least favorite food of many in India. But, it is an easy dish to make. There are so many kinds of upma. My favorite one is rice upma. It is made with broken rice. 


Ingredients for 3 servings:

1 Cup long grain rice

1 teaspoon toor dal

1/2 teaspoon black peppercorn

1 teaspoon coriander

2-3 dried red chili

1 teaspoon mustard

1/2 teaspoon urad dal

1/2 teaspoon channa dal

1/4 teaspoon asafoetida

1 Tablespoon fresh grated coconut 

2 Tablespoon coconut oil

3-4 Cups water


Method:

1. Pulse rice in a blender to make a coarse grain. Place the broken rice in a sieve to separate rice powder. Pulse toor dal and peppercorn to a coarse grain. Sieve to separate powder.

2. Heat oil in a large cast iron pan. Temper mustard seeds, urad dal, and channa dal. Add dried red chili and 4 curry leaves, and asafoetida. Pour 3 cups of water to the pan. Bring it to boil. 

3. Stir in broken rice and broken toor dal and peppercorn. Add 1 tablespoon coconut and salt. Cover and cook on medium low flame, stirring occasionally. Sprinkle water if required. Cook until water is absorbed and rice is cooked. Stir in coriander powder. 

4. Serve hot with chutney or gothsu.


Note: You can add onion, potato, carrots, eggplant and peas to this upma. However, I prefer to make it without any vegetables.
