Bread Upma



 What do you do when you buy 2 loaves of bread when there is already 1 loaf in the refrigerator? Well, this  is what happened last week. My husband texted me from the store to see if I wanted bread for the week. I said yes without checking, and ended up with 3 loaves. Here's what I did on Friday morning before heading for my first out of town trip since January. I made bread upma for breakfast. It was surprisingly light and delicious. I toasted the bread slices, and cooked them with onion and tomato. It was like making regular rawa upma.


Ingredients:

For 3 servings

9 slices of bread ( white or wheat)

1 teaspoon oil

2 teaspoon ghee

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/2 teaspoon urad dal

1/4 teaspoon asafoetida

2-3 green chili, chopped

1/4 teaspoon grated ginger (optional)

1 Cup chopped onion

1 tomato, diced

3-4 curry leaves

1/4 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

salt to taste

1 Tablespoon chopped fresh cilantro

2 Tablespoons lemon juice (adjust to taste)


Method:

1. Lightly toast bread in a toaster oven or toaster. Cut them into bite size pieces. Keep aside.

                                                        

2. Heat oil and ghee in a broad pan over medium heat. Add mustard seeds and cumin seeds. Allow to temper.

                                                             

3. Add green chili and onion. Saute until onion is translucent.

                                              

4. Add curry leaves and ginger. Give a quick stir for 30 seconds.

5. Add tomato and  cook for 2 minutes. Add turmeric powder, chili powder, asafoetida, and salt. Stir and cook until tomato is soft.

                                                        

6. Gently fold in toasted bread bites. Sprinkle just enough water to make it a little moist. Mix in chopped cilantro. 

                                                      

7. Remove from stove. Squeeze some lemon juice before serving. 

                                                      


Note:

Upma tastes better with plain bread.

I used low-carb bread to make this upma. So, I used 12 slices of bread for 3 servings.
