Egg less Banana Bread


Yesterday my daughter offered to make banana bread from the over ripe fruit sitting on my kitchen counter. I asked her to make it without egg this time for my mom who does not eat egg. The bread was very moist and delectable. She made grandma happy.

Ingredients:
3 ripe bananas
1/2 Cup butter, melted
1 teaspoon vanilla
1/2 Cup buttermilk
1 Cup brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 Cups all purpose flour
1/2 Cup walnuts, chopped (optional)

Method:
1. Preheat oven to 350 deg. Fahrenheit. Grease the bottom and sides of a large loaf pan. You can place wax paper on the bottom to avoid sticking.
2. Mash bananas in a large bowl, until smooth.
3. Stir in melted butter and mix to combine.
4. Add buttermilk, vanilla and sugar. Mix well to combine.
5. Sift dry ingredients together. Mix little by little to banana mixture. Stir until combined.
6. Fold in chopped walnuts.
7. Pour batter into the prepared loaf pan. Bake for 60 minutes. Remove from oven.
8. Cool in the pan for 20 minutes before gently lifting bread from the pan.

Note: 
You can substitute flour with whole wheat flour.
You can add chocolate chips to the batter ( my daughter loves them in everything).
