Simple coffee cake





When I offered to bring a cake to celebrate my friend's father-in-law's birthday yesterday, she told me  that he does not like fancy cakes with icing and stuff, and no chocolate. Cake without chocolate! My daughter would not like that idea. Anyway, here I was looking for a simple cake with no trappings and found an easy vanilla cake with only 4 ingredients on butter with a side of bread. It was a very easy recipe to follow. This is a coffee style cake made in a bundt pan with no butter! That's right.. no butter or baking powder. Only Sugar, flour, eggs and vanilla. It was super delicious. The birthday "boy" loved it! The key is to follow the recipe to the T and beat the batter for full 8 minutes.

Ingredients:

1 1/2 cups sugar
6 eggs
1 1/2 cups flour
2 tsp. vanilla extract

For Almond glaze:

1 Tbsp. melted butter
1/2 tsp. almond extract
1 cup powdered sugar
3 Tbsp. milk

Method:

1. Preheat oven to 350 F. Grease and flour a bundt cake pan.
2. Combine eggs and sugar in a large bowl. Use an electric mixer and mix for 1 minute. 


2. Add flour and vanilla and beat on medium speed for 8 minutes.




3. Pour the batter in the prepared bundt pan. Bake for 30-35 minutes, until a tooth pick inserted comes out clean. The cake will be soft to touch. Cool cake completely in the pan for 30 minutes.


4. Invert the cake onto a plate. Drizzle with almond glaze. Serve with cream and fresh berries if desired.


Almond Glaze:

Combine melted butter, almond extract, powdered sugar, and milk in a bowl and whisk briskly to make the glaze.
